Did you know? The very best truffle hunter, since the ancient times, is the pig, not the dog: much greedier, much less trainable, this lovely animal tends to damage the soil and the truffles and, rather often, eats them in one bite.

Perhaps because of the pleasant weather during its harvest season, the summer truffle is reminiscent of the isolated trees and fresh rivers near which it grows. Its taste vaguely evokes that of porcini mushroom and is suitable for fresh and delicate dishes that require “an extra something”.
