Lamb chops with artichokes

An inviting and tasty second course for festive days, which perfectly combines the tenderness of the meat and the delicacy of artichokes already cut into slices.
Ingredients
- 12 pcs lamb chops
- 80 g bread sticks
- 4 artichoke hearts
- Thyme to taste
- Rosemary to taste
- Lemon to taste
- Garlic to taste
- Peppermint to taste
- Extra-virgin olive oil
- Salt to taste
- Pepper to taste
Preparation
- Finely chop the thyme leaves, the rosemary and mix with the crumbled breadsticks and a pinch of salt.
- Grease and rub the lamb chops with salt and pepper.
- Coat the ribs with the mixture of breadsticks and herbs, place them on a baking tray lined with baking paper, season with a drizzle of oil and bake at 260°C for 10-15 minutes.
- Sauté the artichoke hearts in a pan with a drizzle of oil, a pinch of salt and 1 clove of crushed and peeled garlic for 5 minutes and season with 2-3 minced mint leaves.
- Serve the ribs with the artichoke hearts.
