Ingredients

  • 1 kg potatoes
  • 3 egg yolks
  • 75 g Parmesan
  • 60 g butter
  • 180 g Cubed porcini
  • 100 g provola cheese
  • 100 g bacon
  • 40 g walnuts
  • Garlic
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste

Preparation

  1. Boil the potatoes for 30 minutes, peel and mash them to a creamy mash. Add the egg yolks, melted butter, Parmesan, salt and nutmeg and mix the mixture until smooth.
  2. Heat the ventilated oven to 180°C and put the dough into a pastry bag with a star-shaped nozzle. Form small doughnuts with a spiral movement starting from the center and bake for 15 minutes.
  3. Prepare the filling by frying a clove of garlic with a drizzle of oil and adding the Cubed porcini and cook for 5 minutes. Add the diced bacon, salt and let cook for 5 minutes.
  4. When the potato nests are golden, stuff them with the stuffing and serve them adding pieces of walnut.
