Chicken Fajitas with Mixed Mushrooms

Fajitas are one of the great classics of Tex-Mex cuisine: colorful, spiced, and perfect for sharing. A convivial dish where every ingredient comes together in a perfect balance of flavor and character.

In this version, the extra touch comes from Versilfood Mixed Mushrooms, adding depth and intensity to the filling and turning an iconic recipe into an even richer experience.

Ingredients

  • 4 tortillas
  • 400 g chicken breast
  • 1 teaspoon sweet paprika
  • 1 teaspoon curry powder
  • 1 teaspoon ground ginger
  • Juice of 1 lemon
  • Salt, pepper, and extra virgin olive oil, as needed
  • 1 large white or yellow onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 bag of Versilfood Mixed Mushrooms
  • 1 garlic clove

Preparation

  1. Cut the chicken into strips and place it in a bowl with paprika, curry, ginger, salt, lemon juice, and a drizzle of olive oil. Mix well, cover, and let it marinate in the refrigerator for at least 30 minutes.
  2. In a large pan, heat a drizzle of olive oil and sauté the sliced onion for about 5 minutes until softened. Add the sliced peppers, pour in a splash of water, cover, and cook for about 15 minutes until tender. Season with salt and pepper.
  3. UAdd the marinated chicken to the vegetables and cook over medium-high heat for about 10 minutes, stirring, until golden and cooked through.
  4. In another pan, sauté the Versilfood Mixed Mushrooms with olive oil, garlic, salt, and pepper for about 10 minutes until nicely browned and dry.
  5. Warm the tortillas in a pan, then assemble the fajitas with the spiced chicken, peppers, onion, and mushrooms. Add your favorite sauce, roll them up… and enjoy immediately, while the aromas are still intense.
