Kaiserschmarren with Warm Exotic Fruits Sauce

Servus! From the Alps to your table, Kaiserschmarren is one of the most iconic desserts of Austrian tradition: soft, lightly caramelized, roughly torn, and served warm.

In our version, tradition meets a surprising twist: a warm Versilfood Mix of Exotic Fruits sauce—fragrant and velvety—that adds freshness and character to this classic dessert.

Ingredients

  • 1 bag of Versilfood Mix of Exotic Fruits
  • 3 eggs
  • 100 ml milk
  • 50 g flour
  • 50 g sugar
  • 1 pinch of salt
  • Butter, as needed
  • Raisins, as needed
  • Powdered sugar, as needed

Preparation

  1. Separate the egg yolks from the whites. Whip the egg whites until stiff peaks form and set aside.
  2. In a bowl, mix the egg yolks with milk, sugar, flour, and a pinch of salt until smooth. Gently fold in the whipped egg whites, then add the raisins.
  3. Melt a knob of butter in a pan and pour in the batter. Cook over low heat until the base is golden, then roughly break the pancake into pieces using a spatula. Add a tablespoon of sugar and sauté briefly to achieve a light caramelization.
  4. For the sauce, cook the Versilfood Mix of Exotic Fruits in a pan with a tablespoon of sugar for a few minutes, then blend until smooth and fragrant.
  5. Serve the Kaiserschmarren warm with the exotic fruit sauce and finish with a dusting of powdered sugar.
