Christmas is just around the corner… why not take a trip to Lapland to visit Santa Claus?
For our Recipes from Around the World series, we’re making one of the simplest and most beloved desserts of Nordic tradition: Marjakiisseli, a delicate and velvety berry pudding.

In Nordic countries, berries are true kitchen staples. In Lapland’s forests alone, over 50 varieties grow naturally, producing incredible quantities every year. Yet only a small portion is actually harvested—a natural treasure that reflects the deep connection between nature and tradition.

In this version, Versilfood Mixed Berries bring all the intense aroma of Nordic fruits into a fresh, light dessert—perfect for ending a meal on a sweet note.

Ingredients

  • 400 ml water
  • 80 g sugar
  • 30 g cornstarch
  • 300 g Versilfood Mixed Berries
  • Sour cream, as needed
  • Red currants or fresh berries for garnish

Preparation

  1. Pour 300 ml of water into a saucepan, add the sugar, and let it dissolve over medium heat to form a syrup.
  2. In a separate bowl, dissolve the cornstarch in the remaining 100 ml of cold water, mixing well.
  3. Add the Versilfood Mixed Berries (still frozen) to the syrup and let them thaw slightly in the hot liquid.
  4. Remove from the heat and stir in the dissolved cornstarch. Return the saucepan to the heat and cook for about 10 minutes, stirring constantly, until the mixture comes to a boil and thickens into a gel-like consistency.
  5. Pour the pudding into serving bowls and let it chill in the refrigerator for at least two hours.
  6. Before serving, garnish each portion with a spoonful of sour cream and some fresh berries.
