Crispy, golden, irresistible: schnitzel is one of the most beloved symbols of Austrian cuisine. A simple recipe made with just a few steps and genuine ingredients, yet capable of winning you over at the very first bite.

In our version, it’s served with Versilfood Sliced Porcini: fragrant, intense, and ready in just a few minutes. A pairing that brings together Alpine tradition and the authentic taste of the forest, carefully selected to deliver quality and flavor to your table.

Ingredients

  • 1 bag of Versilfood Sliced Porcini
  • 2 veal or chicken cutlets
  • 1 egg
  • Flour, as needed
  • Breadcrumbs, as needed
  • Salt and pepper, to taste
  • Vegetable oil for frying, as needed
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove

Preparation

  1. Pound the meat slices to make them thin and even.
Coat them first in flour, then in beaten egg, and finally in breadcrumbs, pressing well to ensure an even and compact coating.
  2. Fry the cutlets in hot oil until golden and crispy on both sides. Drain on paper towels and lightly season with salt.
  3. Meanwhile, heat a drizzle of extra virgin olive oil in a pan with a garlic clove. Add the Versilfood Sliced Porcini, season with salt and pepper, and sauté over high heat until golden and dry.
  4. Serve the schnitzel hot, accompanied by the porcini mushrooms and, if desired, a side of potatoes or a fresh salad.
