Sienikeitto (Creamy Chanterelle Soup)

Sienikeitto is one of the most beloved soups in Finnish tradition: creamy, comforting, and full of flavor.

In the vast, untouched forests of Lapland, many varieties of mushrooms grow naturally, especially chanterelles, which are widely used in local recipes. In Finland, mushroom picking is a true tradition—no license is even required.

In this version, Versilfood Whole Chanterelles bring their intense aroma to the dish, transforming a few simple ingredients into a warm, velvety soup with a true Nordic soul.

Ingredients

  • 1 golden onion
  • 50 g butter
  • 600 g Versilfood Whole Chanterelles
  • 1 bunch fresh thyme
  • 20 g all-purpose flour
  • 600 ml vegetable broth
  • 150 ml fresh cream
  • 1 bunch chives
  • 60 g sour cream
  • Salt, to taste
  • Pepper, to taste
  • Extra virgin olive oil, as needed
  • Dark bread, to serve

Preparation

  1. Finely slice the onion and sauté it in butter in a saucepan until soft and translucent.
  2. Add the Versilfood Whole Chanterelles and cook for a few minutes with the thyme leaves. Sprinkle in the flour and mix well.
  3. Pour in the vegetable broth, bring to a boil, and let simmer for about 15 minutes.
  4. Set aside a few whole chanterelles for garnish. Blend the soup with an immersion blender until smooth and velvety.
  5. Add the fresh cream, bring back to a boil, and cook for another 5 minutes. Adjust with salt.
  6. Serve the soup hot, garnished with chopped chives, a spoonful of sour cream, and the reserved chanterelles. Finish with freshly ground pepper and a drizzle of extra virgin olive oil. Serve with dark bread.
